This is a simple, but tasty recipe that can be served as a side to any meal. The blue cheese has a very salty, pungent flavor, however this is balanced nicely with the sweetness and acidity from the orange juice. The addition of the cherries provides a fresh, tarte bite which further balances the flavor. Lastly, the walnuts and flax seed provide the salad with healthy omega-3 fats. Specifically, alpha-linolenic acid, which is an essential fatty acid that must come from your diet. Overall, this is a well-balanced salad packed with nutrients to optimize your health and goals.

  • 2 Cups Arugula
  • 2 Cups Kale
  • ¼ Cup Cherries Halved & Cored
  • ¼ Cup walnuts
  • 1 Tbsp flax seed Ground
  • ¼ Cup blue cheese

For Vinaigrette

  • ¼ Cup Orange Juice
  • 1 tbsp Olive Oil
  • 1 tsp Brown Mustard
  • ¼ Tsp Salt


  1. Toss all ingredients for the salad in a large bowl and set aside.

  2. To make vinaigrette, whisk together orange juice, mustard, and salt in a bowl. Slowly whisk in olive oil in a steady stream until mixture becomes homogenous without separation.

  3. Pour vinaigrette over salad, toss and serve in two equal portions.
