Blue Cheese Walnut Salad
This is a simple, but tasty recipe that can be served as a side to any meal. The blue cheese has a very salty, pungent flavor, however this is balanced nicely with the sweetness and acidity from the orange juice. The addition of the cherries provides a fresh, tarte bite which further balances the flavor. Lastly, the walnuts and flax seed provide the salad with healthy omega-3 fats. Specifically, alpha-linolenic acid, which is an essential fatty acid that must come from your diet. Overall, this is a well-balanced salad packed with nutrients to optimize your health and goals.
- 2 Cups Arugula
- 2 Cups Kale
- ¼ Cup Cherries Halved & Cored
- ¼ Cup walnuts
- 1 Tbsp flax seed Ground
- ¼ Cup blue cheese
- ¼ Cup Orange Juice
- 1 tbsp Olive Oil
- 1 tsp Brown Mustard
- ¼ Tsp Salt
Toss all ingredients for the salad in a large bowl and set aside.
To make vinaigrette, whisk together orange juice, mustard, and salt in a bowl. Slowly whisk in olive oil in a steady stream until mixture becomes homogenous without separation.
Pour vinaigrette over salad, toss and serve in two equal portions.
